The 1000-Hours of Local Flavours concept is made possible through collaborations with local producers and suppliers, ensuring that every recipe reflects the distinct tastes and traditions of its region.

Read on to discover some of the flavours that can be enjoyed for 1,000 hours around the world:

Dubai, United Arab Emirates: Mercure Dubai Deira will collaborate with local suppliers, to celebrate 1,000-Hours of Local Flavours. The hotel will offer an “Agarwood Fashioned,” an aromatic cocktail infused with homemade date syrup, spice bitters, bourbon whiskey, and a garnish of locally sourced dehydrated pomegranate, enhanced by oud wood chips from Coral Perfumes. Additionally, the “Masala Carat Tea,” featuring locally sourced spices and milk, garnished with 24-karat gold leaf, is available.  Guests can also indulge in the UAE Rack Lamb, a traditional dish served in a terracotta pot with slow-roasted rack of lamb, topped with crushed pistachio and accompanied by a wheat risotto, roasted cherry tomatoes, and a spiced gravy sauce on the side.

Windhoek, Namibia: Mercure Hotel Windhoek will celebrate the milestone with a taste of local tradition. The hotel will introduce a new dish, Kapana Salsa and Vetkoek. Sourced from Beefcor, a local supplier within a 10km radius of the hotel, the dish offers guests an authentic taste of Namibia.

Nairobi, Kenya: Mercure Nairobi Upper Hill’s 1,000-Hours of Local Flavours offering includes the ‘Jambo’ breakfast with dishes like Mursik, Mahamri, Boiled Maize, and Mayai Pasua. The bar features exclusive drinks such as Leleshwa Wines, and Kenyan Originals Gin cocktails. The signature dish is Githeri a la rice, and the ‘Let’s Go Kenya’ three-course menu features Kachumbari, Brown Ugali with Tilapia Fish & Managu, and Halwa for dessert​.

Alice Springs, Australia: Mercure Alice Springs Resort invites guests to experience 1,000-Hours of Local Flavours at Barra on Todd Restaurant & Bar, with a Territory Tasting Plate that features buffalo, crocodile, and kangaroo, all seasoned with local Indigenous spices. This unique dish provides a taste of the Australian outback, showcasing the diverse and robust flavours of native cuisine. Complementing this exotic platter is the Almost Summer Ale, a locally brewed craft beer from the Alice Springs Brewing Company, adding a refreshing finish to the culinary adventure​.

Brisbane, Australia: The 1,000-Hours of Local Flavours at Mercure Brisbane Spring Hill includes an iced tea refreshment station at check-in using locally sourced loose-leaf tea. At breakfast, guests will enjoy the honeycomb stand from Two Busy Bees Honey, while the bar features a cocktail showcasing coconut and passionfruit from local suppliers. Dinner highlights a dish centred around Coconut Chilli Sauce from Langs Gourmet.

Melbourne, Australia: Mercure Melbourne Doncaster’s 1,000-Hours of Local Flavours features a three-course menu that celebrates Mercure’s history, featuring a French-inspired entrée, an Asian dish for the main course, and a dessert that pays homage to Doncaster’s apple-growing heritage with locally sourced apples. Breakfast includes apple-inspired dishes such as apple pancakes and turnovers, while the bar offers an Apple Martini made with apples and spirits from the Yarra Valley​.

Okinawa, Japan: At Mercure Okinawa, the 1,000-Hours of Local Flavours celebrates local delicacies with Okinawan soba noodles, stir-fried dishes, and renowned Okinawan donuts. A special tea made from roasted Okinawan hibiscus flowers and local lemons, provided by Soeido 35 Coffee Co., enhances the offering​​.

Samarinda, Indonesia: The 1,000-Hours of Local Flavours at Mercure Samarinda offers a taste of East Kalimantan with a breakfast of Kelulut Honey Pancakes, sourced from Madu Loa Honey, and Borneo Luwak Coffee from Marang Kayu. The Ivory Restaurant menu features local delicacies such as Dragon Fruit Salad, Gence Ruan, and Dragon Fruit Sago. Guests can also experience the Luwak Coffee Plantation, providing a deeper connection to the local flavours.

The Maldives: Mercure Maldives Kooddoo’s 1,000-Hours of Local Flavours features breakfast dishes such as Kulimas Theluli Roshi – spicy tuna with fried tortilla, and the signature cocktail ‘Maldivian Green,’ made with curry leaves from the chef’s garden. Guests can also enjoy a romantic private dinner featuring local dishes such as Masroshi (chapati with smoked tuna and coconut) and the Dhivehi Moringa Raha Lobster Ravioli paired with signature cocktails.

Almaty, Kazakhstan:  Mercure Almaty City Center’s 1,000-Hours of Local Flavours celebrates Kazakh culinary traditions with a selection of locally inspired dishes. Guests can indulge in Zhent, a dessert made from millet, sugar, cottage cheese, butter, and raisins. The Gourdet restaurant offers a sumptuous three-course meal featuring Qazy Bauyrsaq, a traditional sausage dish, Pumpkin Manty with Tomato Concasse, and Tary Cheesecake, all crafted with ingredients sourced from the bustling Green Bazaar, Almaty’s famous farmers’ market.

Budapest, Hungary: The 1,000-Hours of Local Flavours at Mercure Budapest Korona features Hungarian Andre goat cheese Camembert with tomato confit. This special dish offers a fusion of creamy textures and rich flavours, celebrating the best of Hungarian gastronomy​​. Guests can also enjoy a luxurious hot chocolate at breakfast, from local manufacturer Mychoccy, or opt for an autumn cocktail crafted from Hungarian Opera gin, known for its unique blend of spices and fountain water.

Fátima, Portugal: The 1,000-Hours of Local Flavours at Mercure Fátima presents a true taste of Portugal, featuring cod fish fritters served with pickles mayo, Iberian pork cheek mille-feuille paired with a fresh salad, and a decadent Port wine and orange egg pudding with marinated fruit. The ingredients are sourced from local suppliers such as Cordeiro & Companhia, who provide fresh vegetables and fruit, and Peroalimentar, a local supplier of pork cheeks. This menu reflects the authentic flavours of the region, offering guests a delightful journey through Portugal’s culinary heritage​.

Barcelona, Spain: At Mercure Barcelona Cóndor, the 1,000-Hours of Local Flavours offers a genuine taste of Catalonia with classic dishes such as Mel i Mató (fresh Catalan cheese with honey), Butifarra (a traditional Catalan sausage), and a selection of local cheeses. Guests can also enjoy Catanias, sweet almonds coated in praline and cocoa powder, and sip on a traditional Catalan vermouth sourced from Padró. This culinary journey immerses guests in the rich flavours and traditions of Catalan cuisine​.

Paris, France: Mercure Paris Porte de Versailles Expo’s 1,000-Hours of Local Flavours offers an authentic Parisian breakfast featuring a Nanterre brioche with almond cream and roasted pear, supplied by Passion Froid, a local producer. The restaurant also presents a menu of mushroom and pumpkin ravioli from CQFD, a sustainable supplier based in Meaux.
