On September 19, 2024, Dario Cecchini and 25hours Hotel San Paolino will open the doors to Cecchini in Città. The world’s most famous butcher has chosen the 25hours Hotel in Florence as the location for his very first venture into the Tuscan capital, one of the most beautiful cities in the world.

On September 19, 2024, Dario Cecchini and 25hours Hotel San Paolino will open the doors to Cecchini in Città. The world’s most famous butcher has chosen the 25hours Hotel in Florence as the location for his very first venture into the Tuscan capital, one of the most beautiful cities in the world. This new establishment will be the latest outpost of his internationally renowned Antica Macelleria butcher shop and the restaurants Solociccia and Officina della Bistecca, both located in his hometown of Panzano, in the heart of Tuscany. His work has been admired by iconic culinary figures, including the late Anthony Bourdain, and featured by best-selling authors like Bill Buford in his 2006 memoir, Heat.

Cecchini represents the eighth generation of a family of butchers from Chianti. A talented artisan, he is known for promoting quality, ethics, and professionalism in how he selects, raises, and works with meat. After establishing himself in Panzano, Cecchini opened restaurants across the globe in the Bahamas, Dubai, Singapore, and Hong Kong. He later returned to Italy, launching “Il Macellaio di Bolgheri” on the Tuscan coast, and now embarks on his Florentine adventure.

The “CECCHINI GRIGLIA” tasting menu will bring the famed Panzano experience to Florence, with seatings twice a day at 1 p.m. and 8 p.m., served at one long communal table. This convivial feast begins with a glass of wine and Dario’s signature “burro del Chianti,” a whipped lard seasoned with herbs so light it can even fool unsuspecting vegetarians. Following this are dishes that exemplify Dario’s commitment to offering the best of traditional Tuscan cuisine, while utilizing every part of the animal. Guests will be served beef tartare (or, as they call it in Panzano, “Chianti Sushi”), beef carpaccio, and Bistecca alla Panzanese (beef round). These steak cuts are accompanied by traditional side dishes like cannellini beans and foil-baked potatoes.

À la Carte Options

At Cecchini in Città, diners will also have the option of an à la carte menu, which will include a selection of vegetarian dishes, such as traditional Tuscan antipasti and handmade pasta served with sauces from the Cecchini family recipe book.

A Theatrical Grilling Experience

The spectacular interior of the 25hours Hotel Piazza San Paolino will provide the perfect setting for Dario’s grilling ritual at Cecchini in Città. A large grill positioned within the grand fireplace at the heart of the restaurant will give guests the sense they are in a theater dedicated to the art of perfectly preparing meat.
